Since we did the Whole30 together (Check out the results of my first Whole30 here), my mom and I have been enjoying creating delicious meals together. She used to be the one who cooked all the time, but now we get to spend the time together in the kitchen. I really enjoy this new element of our relationship and I think she does too! We have been happily creating delicious soups and stews the past few weeks, with the (somewhat) cooler weather here in Los Angeles. Thankfully it has been nice and chilly most nights. This stew has been our favorite creation so far. It is the perfect balance of seafood and veggies, with a creamy broth, but is dairy-free, soy-free and gluten-free!

• 1 lb wild caught cod
• 4 cloves garlic, minced
• 2 TBSP lemon juice
 4 carrots
• 2 cups diced potatoes
• 1 medium sweet onion, diced
• 1 shallot, chopped
• 10 medium mushrooms total (we used 5 white and 5 brown), sliced
• 2 cups tomato, diced
• ghee and/or olive oil
• 1 tsp red pepper flakes
• salt and pepper
• 1 box 32 oz seafood stock (ours was from Sprouts)
• 1 can full fat coconut milk
• 1 lb wild caught shrimp
• 1/2 lb crab meat (we added in leftover king crab leg meat and this added a whole new component, optional)

Creamy Paleo Seafood Stew (whole30)

  1. Cut up cod into 1-2″ pieces. Put in bowl with minced garlic and lemon juice. Refrigerate while completing remaining prep.
  2. Cut up all the veggies.
  3. Melt 1 TBSP ghee and warm 1 TBSP olive oil at the bottom of the pot you will be cooking your stew in.
  4. Put in cut carrots and potatoes and let cook until tender.
  5. Add onions, shallots and mushrooms. Stir and cook until onions are translucent.
  6. Add in tomatoes, red pepper flakes, salt and pepper. Cook for a couple minutes.
  7. Add seafood stock and coconut milk. Stir more and let simmer for at least 10 minutes, until all the veggies are thoroughly cooked.
  8. While your stew is simmering, clean your shrimp (take tails off and devein).
  9. Place cod mixture (with lemon juice and garlic) and shrimp in stew.
  10. Cook until fish and shrimp are done.
  11. Put crab meat (already previously cooked and taken out of shells) into the stew, just to warm it back up.
  12. Enjoy!
